I don’t know why we haven’t thought of this yet, but boy am I glad we did! I didn’t search for the perfect ‘bark’ recipe, but WOW is this good!
If you’re not familiar with the Wolfberry, it’s also known as the Goji berry. However, being grown in this particular Ningxia region of China lends something extra special. Here’s the product description from Young Living…

I don’t care WHO you are, healthy is sexy–and chocolate is good! 🙂 We made 2 batches:
1 1/2 cups Ghiradelli semisweet chocolate chips
1/4 cup raw almonds
1/4 cup Ningxia Dried Wolfberries
1 lb. of dark chocolate
1/2 cup Ningxia Wolfberries
1/2 cup raw almonds
Line a Pyrex dish or cookie sheet with wax paper. For extra nonstick protection, ‘grease’ the pans and wax paper with coconut oil. Gently melt the chocolate in a double boiler (We used a makeshift double boiler but oh-em-gee we want one of these!) stirring constantly until it’s nice and smooth.
Keep the temperature as low as possible while you melt the chocolate, and stir it constantly. **At this point you could add in 2 drops of Young Living Orange Essential Oil if you choose. We did try some with the orange oil added in, and if you like fruit & chocolate you’ll like that. :-)**
Once the chocolate is very, very smooth drop in the berries & nuts, stir and spread your mixture out evenly. Let the bark harden (put it in the fridge for a quickie shortcut) and break it into pieces. 🙂 Be warned–it’s yummy.
Couple notes… I felt like the semi-sweet chocolate came out too soft to be ‘bark’ and made the second batch with this:
I didn’t think it was ‘barky’ enough either, so I did some research. I admit I was shocked when I realized all there is to know about chocolate and making bark. We are not chocolatiers, but the people who wrote this article are–so if you want to do all that, have at it! 🙂
Thankfully, as they hardened more overnight, they’re both acceptable as ‘bark’ in my book. Our disclaimer is…refrigerate the finished product if necessary. 🙂
So, we’re planning to make this and a few other goodies at a Valentine’s make and take soon and wanted to share this. This recipe would also be great as individual candy in molds like these… and handed out in something like this…
